Nasi goreng, literally meaning "fried rice" in Indonesian, can refer simply to fried pre-cooked rice, a meal including stir fried rice in small amount of cooking oil or margarine, typically spiced with kecap manis (sweet soy sauce), shallot, garlic, tamarind and chilli and accompanied by other ingredients, particularly egg, chicken and prawns. There is also another kind of nasi goreng which is made with ikan asin (salted dried fish) which is also popular across Indonesia. In 2011 an online poll by 35,000 people held by CNN International chose Nasi Goreng as the number two of their 'World’s 50 Most Delicious Foods' list after rendang.

Ingredients

  • 3 tbsp vegetable oil
  • 2 chicken thigh fillets cut into strips
  • 1 carrot, finely chopped
  • 1 garlic clove, finely chopped
  • 1 piece of ginger root, finely chopped
  • 2 red chillis, finely chopped
  • 4 onions, finely chopped
  • 1 tbsp soy sauce
  • 100g small dried prawns
  • Pinch of dark brown sugar
  • Pinch of salt and freshly ground pepper
  • 100g peanuts
  • 4 eggs
  • Chopped coriander
  • 400g cooked long-grain rice left to cool
  • Handful of green beans, cut in half
  • 1 white cabbage leaf, thinly sliced

How to make

  1. Heat the oil in a wok and stir-fry chicken strips. Transfer to bowl.
  2. Stir-fry finely chopped onions, carrot, garlic, ginger and chilli for five or ten minutes.
  3. Now add the remaining oil and add your egg, keep stirring and chopping with your spoon creating a scrambled egg
  4. Return cooked chicken to the wok, add soy sauce, dried prawns and rice. Keep stirring; add salt, sugar and pepper to taste.
  5. Crush the peanuts in a dry wok and fry up. Transfer to bowl.
  6. Fry the eggs separately.
  7. Serve rice topped with the eggs; put peanuts on the side. Cover with chopped coriander.
  8. Add prawn crackers and chicken satay sticks.
