Rica-rica or sometimes simply called rica is a type of hot and spicy bumbu (spice mixture) found in Manado cuisine of North Sulawesi, Indonesia. Rica-rica uses a lot of chopped or ground red and green chili peppers, bird's eye chili, shallots, garlic, ginger, and a pinch of salt and sugar. All that grounded spices are cooked in coconut oil and mixed with lime leaf, bruised lemongrass and lime juice.

Ingredients

  • 1 chicken pieces ( wash and cut into 15 parts )
  • 2 stalks lemongrass ( geprek then crushed )
  • 1 vertebra ginger ( geprek then crushed )
  • 4 lbr lime leaves
  • 1 pandan leaves lbr
  • 1 glass of water
  • 5 tablespoons cooking oil

Spices

  • 1.5 tsp fine salt
  • 25 pcs red chili curly
  • 6 spring onions
  • 4 cloves of garlic

Topping

  • 1 tomato, thinly sliced
  • Cucumber  
  • Lettuce

How to make

  1. Chicken lumurin has been cleaned with salt , then pour the lime juice and let stand about 10 minutes
  2. Fried chicken pieces was half cooked , then drain
  3. Saute chicken seasoning rica - rica was hinga fragrant
  4. Put the chicken pieces into the spice stir . Include lemongrass , ginger , kaffir lime leaves , pandan leaves , and pour 1 cup of water earlier . Toss well
  5. Cook and let stand until the water content dries
  6. Rica - rica chicken ready to be served
