Nasi liwet is a kind of food from Solo, Central Java. Rice is usually cooked in water, but nasi liwet is rice cooked in coconut milk and chicken broth, thus giving the rice a rich and succulent taste. This is a traditional Javanese way of cooking, from the past until now.  In Solo, it is usually eaten for breakfast, but also for lunch. In Keprabon district, nasi liwet is only served at nighttime.

Ingredients

  • 2 cups of jasmine rice
  • 1 stalk lemongrass, pounded to release the flavour
  • 3 pandan leaves, knotted
  • 1-2 red chillies, seeds removed and sliced
  • 3 cloves garlic, roughly chopped
  • 2 cloves shallot, roughly chopped
  • 2Tbs chicken stock powder
  • salt and pepper, to taste
  • 1000 cc coconut milk
  • 1Tbs oil
  • water (a little bit more that the usual amount used to cook the rice)

How To Make

  1. Wash rice until water runs clear. Put rice in a rice cooker and add water until the rice is submerged
  2. Add pandan leaves and lemongrass into the rice.
  3. Heat oil in a frying pan. Add garlic and shallot until fragrant.
  4. Add slice chillies and stir-fry to release the smell.
  5. Add garlic, shallot and chillies into uncooked rice.
  6. Add the remaining ingredients into the rice. Set the rice cooker menu to mixed rice and let it cooks.
  7. Once the rice finishes cooking, open the rice cooker and mix the rice. Close it and set keep warm for about 15-20 minutes.
  8. Serve warm with the side dishes for nasi liwet.  Serve with Grilled Chicken, Sambal Oelek and serundeng
